Vegetable Soup w/Lentils

 

1 Med. onion, diced

1/2 t salt

2 c. diced potaotes

1/2 t sweet basil

1 c celery chopped

1 t parsley

1/2 c lentils

7-8 c water

1 lg. carrot, diced

 

 

Bring water to boiling in a large kettle. Add all the ingredients and simmer

for 1 hour. If desired, can be lightly mashed before serving to make a

thicker soup.
