Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 Minestrone Soup 1 c. red beans (dry) 1 large can tomatoes(1 quart) 4 c water 1 c. peas, fresh or froz. 1 onion, chopped 1/2 c brown rice 2 c. carrots, diced 2 T parsley, chopped 1/2 c celery(including the leaves),diced 1 large potato, diced 3 T chicken style seasoning 2 c chard or cabbage, cut fine 1 t. salt 1/8 t garlic powder 1 bay leaf Sort and wash beans in cold water. Bring water to boiling in large kettle. Add beans and allow to return to boil. Turn off heat. Let stand for atleast one hour, covered. Bring to boil, add salt, and let simmer for one hour. Add remaining ingred. and enough water to cover well. Simmer until all ingred. are tender. Remove bay leaf and serve. Language is an expression of thought.
