Creamy Rice Pudding

 

2 c. Rice (brown, cooked)

1 1/2 c. Soy Milk (or Nut Milk),BR> 1/2 c. Raisins

1/8 tsp. Lemon Extract

2 Tbs. Honey

1/4 tsp. Coriander

1 tsp. Vanilla

1/8 tsp. Salt

 

 

Mix everything together. Pour into lightly oiled 8 x 8 inch baking dish.

Bake at 350 degrees F for 45 minutes. Note: For creamier pudding, add extra

cup of milk and bake 10 more minutes. You can also try using other cooked

whole grain cereal
