Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 Roasted Roots 1 1/2 c. Potatoes, Russets 1 c. Mushrooms (fresh) 1 c. Carrots (baby) 2 Tbs. Olive Oil 1 c. Leeks (thinly sliced) 1 1/2 c. Yams (Peel & slice) Salt, to Taste Some Parsley Preheat oven to 500 degrees F. Slice potatoes, mushrooms, and yams into 3/4 inch cubes. Mix together well in a bowl with some salt and oil. Then, spread out on a cookie sheet (with a rim on the edge) and put in the oven. Stir mixture after 10 minutes and add the leeks and more salt if desired. Continue to cook for another 20 minutes or more, stirring every 10 minutes, until vegetables are lightly browned and soft. Serve vegetables on a platter; garnished with parsley Variations:Try adding peeled & chopped beets and red onions, use green onions instead of leeks, and/or garlic powder.
