Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 Herbed Tofu & Vegetable Saute 2 c. Onions (chopped) 4 Garlic Cloves (coarsely minced) 1 Tbs. Olive Oil 3/4 tsp. Salt 3-4 c. Broccoli (florets, cut into 1 1/2 inch pieces) 10 Mushrooms (sliced) 1/2 lb Tofu (cut into 1/2 inch cubes) 1/2 tsp. Basil 1/4 tsp. Thyme 1 small Bell Pepper (red, coarsely minced) In a wok or skillet, saute onions and half the garlic in olive oil with salt for 5 minutes over medium heat. Add broccoli and mushrooms, saute for another 5 minutes. Add tofu, bell peppper, and herbs. Saute for another 8-10 minutes or until everything is just tender. Add the garlic for the last 2 minutes of cooking time. Be careful not to overcook the vegetables. Serve over rice or nooodles. Language is an expression of thought.
