Spinach-Parsley Pesto

 

2 c. Spinach (packed, leaves)

2 c. Parsley (packed, fresh leaves)

1/2 c. Walnuts (or pine nuts)

3 Garlic Cloves

1/2 c. Olive Oil (extra virgin)

1/4 tsp. Salt (or to taste)

 

 

Place the spinach, parsley, walnuts, and garlic in a food processor

container fitted with a steel blade (a blender will not work for this

purpose). Cover and process until finely copped. While the motor is running,

gradually pour the olive oil into the processor. Add the salt; process until

combined.
