SWEET & SOUR TEMPEH

2 tempeh patties, cooked according to " basic tempeh " method

and cut in 1/2 inch cubes

1 red bell pepper, sliced lengthwise

1 yellow bell pepper, sliced lengthwise

1 carrot, cut in match stick slices

1 cup broccoli flowerettes

1 ear corn kernels

2 Tb. olive or sunflower oil

1 tsp. toasted sesame oil

1/2 cup green onion, finely chopped for garnish

1/2 cup cilantro, chopped for garnish

toasted sesame seeds for garnish

 

- Prepare sweet and sour sauce, set aside.

- In saute pan or wok, heat oils until hot then add red and yellow bell

peppers and stir-fry for one minute.

- Then add broccoli, carrot and corn kernels.

- Stir fry until veggies are slightly cooked.

- Pour in sauce and tempeh cubes.

- Serve over rice or noodles.

- Garnish with fresh cilantro, green onions, and toasted sesame seeds

 

 

 

 

Sweet and Sour Sauce

1 cup apple juice

1/3 cup soy sauce

2/3 cup water

1/3 cup maple syrup

1 Tb. miso

1 Tb. whole grain mustard

1/3 cup rice vinegar

2-3 slices ginger, pressed or grated

3 Tb. kuzu

 

- Dissolve miso in water

- Put all ingredients in saucepan except one half cup of apple juice and the

kuzu

- Place over high heat.

- Dissolve the kuzu in remaining apple juice.

- Add to saucepan, stirring until mixture thickens and comes to boil (2-3

min.)

- Remove from flame.
