Sun Dried Tomato Pesto

 

1/2 c. lightly packed, sun dried Tomatos

2/3 c Water (boiling)

1/2 c. Olive Oil (Extra Virgin)

4 cloves Garlic

 

 

 

Instructions: Use dried Tomatos, not Oil Marinated Tomatos. In a medium

bowl, combine the tomatos and water. Let stand 10 minutes and drain. Place

the Tomatos, Oil and Garlic in a food processor container fitted with a

steel blade. (A blender will not work for this purpose.) Cover and process

until fairly smooth. Use as a sandwitch spread. Variation: Add fresh Basil

leaves.
