Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 Eggplant Spread 1 small Eggplant 2 Garlic Cloves (minced) 1 tsp. Salt 1/4 c. Lemon Juice 2 Tbs. Olive Oil 3 Tbs. Mayonnaise (or Tahini) Preheat oven to 400 degrees. Pierce the skin of the eggplant and bake or microwave until tender (45 minutes to oven bake, 10 minutes in microwave). Let cool and remove skin. Chop pulp until very fine. Combine pulp with remaining ingredients. Cover and chill at least 1 hour before serving. Use as a dip or for filling wholewheat pita pockets Cashew Spread 4 Tbs. Agar (flakes) 1 1/2 c. Water 1/2 c. Cashews (raw) 1 can Pimientoes (4 oz) 2 Tbs. Lemon Juice 1/4 c. Brewer's Yeast (flakes) 1 tsp. Onion Powder 1 tsp. Salt 1/4 tsp. Garlic Powder 1/8 tsp. Dill Seed (ground) Boil water and agar until agar is dissolved. Combine everything in blender and blend until smooth. May use more or less agar to make it thicker or thinner. Variation: Add 1/4 to 1/2 cup quick oats instead of agar flakes. Blend all ingredients together and then cook on the stove until spread thickens. This gives it a more spread-type consistancy. The recipe above gives it a more slick, soft, sliceable consistancy. May also add sliced olives. Black Olive Spread 2/3 c. Olives (chopped, black) 2-3 tsp Mayonnaise (vegan) 1 Tbs. Brewer's Yeast Mix all ingredients well. Spread and enjoy. Refrito Spread 1 1/2 c. Black Beans (cooked, well-drained) 1 bunch Green Onions (or a big onion) 1 Tbs. Oil 1-2 cloves Garlic 1/2 tsp. Cumin 1 tsp. Chili Powder 1/4 c. Bell Peppers (chopped) 1/2 c. Cheese (grated cheddar) 1/2 tsp. Salt Mash the beans (you should end up with about a cup). Chop the onion and saute with whole garlic cloves in oil. When the onion is done, crush the garlic with a fork. Add the spices and the pepper. Cook until the pepper is softened and the spices are fragrant. Remove from heat and cool slightly. Add beans and mix. Add cheese and salt, and check the flavor; if the beans are unsalted, you may need more salt. Variation:Use kidney beans instead of black beans.
