Green Beans (cutinto 2 inch pieces) 3 Garlic Cloves (finely chopped) 1 Onion (chopped) 2 Tbs. Olive Oil 2 Tbs. Parsley (fresh, finely chopped) 2 Tbs. Lemon Juice 2 c. Tomatoes (chopped) Boil the green beans briefly in water until barely tender. In a large skillet, gently saute the garlic and onions in the oil over moderate heat for about 5 minutes or until the onion is soft and translucent. Stir in the chopped tomatoes and parsely and season with salt. Bring to a boil and cook, uncovered, until most of the liquid has evaporated. Stir in the green beans (without liquid) and lentils and simmer for 5-6 minutes longer or until heated through. Add the lemon juice and check the seasoning. Serve hot.
