Fantastic Gluten Broth

 

9 c. Water

1/2 c. Onion

2 cloves Garlic (chopped)

1/2 c. Soy Sauce (or Liquid Aminos)

1 Tbs. Beef Flavored Seasoning (or use chicken style seasoning and a little

less soy sauce.

 

 

Make gluten following the Fantastic Gluten recipe below. Combine the broth

ingredients in a lage pot and bring to a boil. While broth is coming to a

boil, slice off round circles of gluten. Place circles on sprayed (with Pam)

parchment paper. Flatten each slice with a flat round instrument (such as a

glass or masher). Drop slices into the boiling broth. Bring back to a boil

and then turn it down to simmer for 1 1/2 hours.

 

Fantastic Gluten

 

1 1/2 c. Water

1/2 c. Oatmeal

1/2 c. Brewer's Yeast (powder or flakes)

1/3 c. Wheat Germ

1/2 c. Onions

1 Tbs. Oil (Canola)

1 Tbs. Soy Sauce (must use a little more if using Liquid Aminos)

1 pkg of Lipton Onion Soup Mix or 1/4 c. Onion Soup Mix purchased in bulk

2 1/4 c Vital Wheat Gluten Flour

 

 

Blend all of the ingredients together in a blender, except the gluten flour.

Pour the mixture into a bowl. Stir the gluten flour quickly into the blended

mixture with a fork. The mixture should become very stiff, but able to mold

with your hands into a roll. You may need to add a bit more flour for a

desired stiffness.

 

Mold into a roll about 2 and 1/2 inches thick and 18 inches long and wrap in

parchment paper. (If you do not have parchment paper, just let it rest in a

bowl with a towl over the bowel. DO NOT use wax paper as it will be very

messy.) Let rest for 2 hours. Cook the gluten in the Fantastic Gluten Broth

(recipe found above) following the broth instructions. Makes 25-35 gluten

steaks.
