Guest guest Posted January 15, 2002 Report Share Posted January 15, 2002 Glazed Banana-Raisin Bread Bread: 2 1/2 cups all purpose flour 2 1/2 teaspoons baking powder 1 1/4 tespoons ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon salt 4 ripe large bananas, mashed, about 2 cups 1 cup packed brown sugar 1/2 cup unsweetened applesauce 2 eggs 1 1/2 teaspoons vanilla extract 1/2 cup raisins Glaze: 1/2 cup confectioners' sugar 2-3 teaspoons milk Preheat oven to 350. Coast 9 " x5 " x3/4 " loaf pan with cooking spray. Combine flour, baking powder, cinnamon, soda and salt; reserve. In large bowl combine bananas, sugar, applesauce, eggs and vanilla until smooth. Gradually stir in flour mixture until combined. Stir in raisins. Transfer to pan. Bake 1 hour to 1 hour 10 minutes or until toothpick inserted into center comes out with moist crumbs clinging. Cool on rack 20 minutes. Remove from pan; Cool completely on rack. Glaze: When bread is cool stir together sugar and milk. Place in plastic food storage bag with one corner snipped and pipe over bread, or with spoon drizzle over bread. Set aside until glaze sets before slicing.
