Guest guest Posted January 16, 2002 Report Share Posted January 16, 2002 Arabian Pocket Bread 1T dry yeast 1 t sugar or honey 2 C lukewarm water to 6 c flour(w.w. & white) Dissolve yeast and sugar in water 5-10 minutes. Combine all ingredients, work into a medium stiff dough ball. Knead until smooth and elastic. Cover and let stand in a warm place until double in size. Form dough into a long roll, and cut in 16 equal pieces. Form each into a ball. Cover and let rise on cloth 30 min. Roll into 1/4 inch thick circles. Cover, let rise again on cloth for 30 min. Heat oven to 375. Place circles of dough on oven racks. As soon as dough puffs up (2-5 min.) place under blroiler for a few seconds until lightly browned. Makes 16 large servings.
