Veggie Fajitas

 

*Use Butter or Margarine Only - No Substitutes*

 

Heat in skillet about 3 Tbs. of Margarine or Butter. When melted, add:

1/2 c. sliced Onion in half ring slices

1 c. Broccoli

1/2 c. fresh Mushrooms, rinsed and cut

1/4 c. sliced Carrots

1/4 c. sliced Celery

 

 

Saute' all vegies till nice and tender, then add at very last 1/2 cup

cooked Black Beans and 1/2 cup fresh Tomato cut in wedges. Fold in

with rest of veggies and fry 1 minutes. Remove from heat and add in 1

Tbs. Taco Seasoning and 2-3 Tbs. BBQ Mesquite Sauce. Serve with Flour

Tortillas. Makes plenty of Fajitas!

 

 

Homemade Flour Tortillas

 

4 c. White Flour

1/4 t. Salt

2 t. Baking Powder

1/2 c. Vegetable Shortening

1 c. Warm Water

 

 

Mix first 3 ingredients (flour, salt, and baking powder). Next add

shortening. (If texture is tough, add more.) Mix and cut into flour

mixture. Knead 8-10 minutes until smooth. Place in Saran Warp till

ready to make tortillas. It can sit for 1 hour for better use. Make

small balls (5-6 at a time) approximately 1 1/2 " in size. Cover. Form

into round shaped balls with hands and roll out very thin. Fry in

Teflon pan or griddle with ABSOLUTELY NO OIL! Fry both sides till a

nice golden brown in color. Should bubble when ready to flip to next

side. Store in a covered container when finished frying tortillas.

Can use tortillas for Bean Burritos, Fajitas, or your favorite

filling.
