Tofu Rice Croquettes

 

4 c. Rice (brown, cooked)

4 c. Tofu (depending on the size, it usually takes about 3 Tofu

packages)

1/2 c. Peanut Butter

1-2 tsp. Salt

2 Tbs. Oil

1 Tbs. Onion Powder

3 Tbs. Liquid Aminos (or Soy Sauce)

1-2 tsp. Paprika (as desired for sprinkling)

1 c. Parsley (fresh, chopped fine)

 

 

Mix together in order given. Add seasonings to taste. Form into

patties or croquettes and sprinkle with paprika. Bake at 350-375

degrees F, turning to brown on all sides. Serve with gravy or

cranberry sauce. Note: We prefer it with cranberry sauce. With the

parsley, it's best if you can snip it or chop it to be faily fine,

but don't cut down on the quantity. These also make delicious " meat "

balls when rolled into balls and added to spaghetti sauce.
