Guest guest Posted January 16, 2002 Report Share Posted January 16, 2002 Steamed Vegetable Buns (Baozi)- (Chinese) 3 tsp. Yeast 1 tsp. Sugar, brown 1 lb White Flour (about 2 1/4 c.) 1/2 tsp. Salt 1 c. Water (warm) 2 c. stir fried vegetables of your choice Sprinkle the yeast into the cup of luke warm water in a bowl. Add the sugar and stir. Let the yeast rise until double in size. Put the flour in a bowl and stir in the yeast mixture. Add more warm water (1- 1 1/2 cups) gradually to make a nice elastic dough. Knead well, cover with a cloth and let rise for an hour in a warm place. When the dough has doubled in size, knead it again for a few minutes and roll out on a floured board to make a long sausage about 2 fingers in diameter. Cut the sausage into rounds about 1 finger in thickness. Flatten each round with the palm of your hand and roll out to make a small pancake. Put a tablespoon of stir fry vegetable filling in the center. Gather the edges of the pancake and pinch them together at the top with a little twist. This will create characteristic pleats at the sides of the little dumpling. Put the dumplingts on damp muslin, waxed paper or foil on a rack in a steamer and steam over a high heat for 10 minutes. Serve hot. Hint: It is best to have the stir fried vegetables chopped small so a nice mixture of the vegetables can easily fit inside the buns. You may also add some whole wheat flour to the dough if desired. These freeze well and can be re-heated by putting them in the microwave inside a bag.
