Guest guest Posted January 16, 2002 Report Share Posted January 16, 2002 Couscous Sandwich - (Indian) 1 pkg. Couscous 1/2 can Olives (Large) 1-2 medium Tomatoes (red) 1/2-1 c. Cheese (Monterey Jack) Follow the stove-top directions for couscous. This takes five minutes. Let cool. Dice tomatoes, put in medium sized bowl. Chop olives and add to tomatoes. Grate cheese and also add to other items. Mix in cooled couscous. Slice pita bread in half to make a pocket. Spoon couscous mix into pocket and serve. This actually turns out to be very filling!
