4 c. unsweetened shredded coconut

3/4 c. whole wheat flour

1/3 c. rolled oats, old fashioned

3 c. dates

1/3 t. salt

1/8 c. water

1 1/2 c. raisins

1 2/3 c. chopped walnuts

1/2 c orange or pineapple juice

Blend water, juice, dates, raisins, until smooth. Add dry ingredients. Mix

lightly. Scoop onto ungreased cookie sheet with small ice cream scoop.

Bake until browned, 20-30 min. at 350°. May add peanut butter. May use 2

c. dates and 3 c. coconut.

 

48 servings 120 calories per serving
