Crunchy Tofu Cutlets or Sticks

 

Serves 6-8

 

Preheat oven to 400 degrees F.

Freeze, thaw, and squeeze out:

2 lbs. tofu

or have ready:

2 lbs. firm tofu

Cut the tofu into 1 1/2 " x 3 " x 3/4 pieces and marinate for 2 hours in:

1/4 cup soy sauce

Roll each stick in a mixture of:

1 cup cracker crumbs

1 cup unbleached white flour

1 tsp. salt

1 tsp. garlic powder

2 tsp. parsley flakes

1/2 tsp. tumeric

 

Brush a cookie sheet with:

2 Tbsp. oil

 

Lay the tofu pieces on the cookie sheet leaving about 1/2 " between each

piece. Bake for 15 minutes on each side. Serve with Tartar Sauce or cocktail

sauce.
