Italian " Sausage " Egg Bake

Ingredients

 

1 package (6 ounces) seasoned stuffing mix

1 package (12 ounces) frozen sausage-style soy crumbles

1 medium red bell pepper, cut in 1/2-inch pieces

2 medium green onions, sliced (2 tablespoons)

1 cup shredded Veggie Swiss cheese (4 ounces)

2 cups 8th Continent™ original soymilk

1/2 teaspoon Italian seasoning

1/2 teaspoon salt

1 can (10 3/4 ounces) condensed cream of mushroom soup

6 eggs

 

 

Directions

 

1. Heat oven to 350°F. Spray rectangular baking dish or pan, 13x9x2 inches,

with cooking spray.

 

2. Layer stuffing mix, soy crumbles, bell pepper, green onions and cheese in

baking dish.

 

3. Stir together remaining ingredients until blended; pour over ingredients

in baking dish.

 

4. Bake 45 to 55 minutes or until knife inserted in center comes out clean

and top is set and lightly browned. Let stand 5 minutes before serving.

Substitution

Call this your own by substituting your favorite vegetables, such as

mushrooms or broccoli, for the bell pepper. Also try other cheeses instead

of Swiss, if you'd like.

Vary the flavor by using a different variety of seasoned stuffing mix each
