Guest guest Posted January 16, 2002 Report Share Posted January 16, 2002 Lemon Tofucake (serves eight, 200 calories per serving) Ingredients: For the filling: 1 lb. of silken tofu (a particularly creamy variety of tofu, ideal for desserts) - 50 g of brown sugar - 1 Tbs of tahini (a paste made of ground sesame seeds) - 1/2 tsp of unrefined salt - 2 Tbs of cornstarch dissolved in 2 Tbs of rice milk - 1 Tbs fresh lemon juice. For the crust: 2 cups of all bran corn flakes - 60 ml of maple syrup. Preparation: 1. Preheat the oven to 180°C (350°F). 2. Place the corn flakes in a blender and grind them to fine crumbs. Then add the maple syrup and mix very well, until the crumbs are moistened. 3. Pour the mixture into an oiled pie plate of about 20 cm (9 inches) and press it evenly to form a crust. 4. Put the pressed mixture into the preheated oven and bake it for 5 minutes. Then let it cool a bit while you prepare the filling 5. Blend all the ingredients for the filling in a blender, until the mixture is very smooth, then pour it into the cooled crust. 6. Bake the pie until the top is slightly golden, then cool it and refrigerate it until it is thoroughly chilled and firm (it'll take a couple of hours) before serving.
