Tofu Reuben Sandwich

 

Ingredients:

 

Extra Firm Tofu cut to 3/4 " thick (sandwich bread size)

Tamari

Onion (sliced)

Carrot (julienned)

Sauerkraut

Veganaisse

Mustard

Water for frying, or oil

Directions:

 

1. Using water or oil, place enough to coat pan for frying onions and

carrots until soft.

 

2. Season with tamari.

 

3. Place tofu slices in pan with carrots and onions and sprinkle with

additional tamari. Cover and simmer 2-5 minutes, then turn over and

sprinkle other side. Continue to add water as needed to avoid

burning/sticking.

 

4. Place sauerkraut on tofu slices to taste. Pour in a small amount

of sauerkraut 'juice.' Simmer an additional 2- 5 minutes.

 

5. Prepare bread by spreading on veganaisse and mustard.

 

6. Place tofu slices on bread with sauerkraut, onion and carrot as

topping.

 

This is my favorite sandwich in the whole world. Enjoy!

 

Serves: 1 or more

 

Preparation time: 15-20 minutes
