Guest guest Posted February 4, 2002 Report Share Posted February 4, 2002 Fried Green Tomatoes from: Sylvia's Soul Food Book 3 large green or slightly ripe tomatoes Salt Freshly ground black pepper About 1 cup fine yellow cornmeal OR all-purpose flour 1/2 cup vegetable oil 1. Slice the tomatoes 1/4 inch thick. Sprinkle both sides with salt and pepper. Dredge the tomato slices in the cornmeal until completely coated. Let them dry on a wire rack, 5-10 mins. 2. Heat the vegetable oil in a large heavy skillet over medium heat until an edge of a tomato slice dipped in gives off a lively sizzle. Carefully slip as many of the tomato slices into the skillet as will fit without crowding. You may have to fry the slices in batches. Fry them, turning them once, until they are golden brown on both sides and tender, about 5 minutes. Remove them to paper towels to drain and repeat with the remaining slices. Enjoy!
