Guest guest Posted February 6, 2002 Report Share Posted February 6, 2002 Chewy Coconut Bars - sugar free2 eggs7-1/4 teaspoons Equal® for Recipes or 24 packets Equal® Sweetener or 1cup Equal® Spoonfull1/4 teaspoon maple flavoring1/2 cup margarine, melted1 teaspoon vanilla1/2 cup all-purpose flour1 teaspoon baking powder1/4 teaspoon salt1 cup unsweetened coconut,* finely chopped1/2 cup chopped walnuts (optional)1/2 cup raisinsBeat eggs, Equal® and maple flavoring in medium bowl; mix in margarineand vanilla. Combine flour, baking powder and salt in small bowl; stirinto egg mixture. Mix in coconut, walnuts, and raisins. Spread batterevenly in greased 8-inch square baking pan.Bake in preheated 350ºF oven until browned and toothpick inserted incenter comes out clean, about 20 minutes. Cool in pan on wire rack; cutinto squares.Makes 16 bars.*Unsweetened coconut can be purchased in health food stores.
