Guest guest Posted February 8, 2002 Report Share Posted February 8, 2002 Chocolate Bread Pudding- lowfat1 nonstick spray3/4 c unsweetened cocoa powder1 3/4 c sugar3 c nonfat milk1 lb day old bread with crusts1 removed, torn into pieces1 tb vanilla1 egg2 egg whites1 ts cinnamon1/2 ts salt1 ts finely grated orange peelPreheat oven to 375 degrees. Spray a loaf pan with nonstick spray anddust with cocoa powder. Combine cocoa and 3/4 c sugar with milk in asaucepan. Cook over medium low heat until dissolved. Cool. Pour overbread and soak until bread absorbs mixture. Combine vanilla, egg and eggwhites, cinnamon, remaining sugar, salt and orange peel. Place one layerof bread in loaf pan. Pour a little of the egg mixture over. Continueplacing bread and egg mixture in loaf pan until pan is filled. Pourremaining egg mixture over the top and bake for 45 minutes to 1 hour, oruntil crusty on top, puffy, and set in the middle. Let cool slightly andserve warm or cold.
