Guest guest Posted February 8, 2002 Report Share Posted February 8, 2002 Sugar Free Orange Chiffon Cheesecake2 cups graham cracker crumbs8 tablespoons light margarine, melted3 packets Equal sweetener1 cup orange juice1 envelope (1/4 ounce) unflavored gelatin12 ounces reduced-fat cream cheese, softened1 cup part-skim ricotta cheese12 packets Equal sweetener2 cups light whipped topping2 medium oranges, peeled, seeded and chopped Oranges (optional)Spray 9-inch springform pan with nonstick cooking spray. Mix grahamcracker crumbs, margarine and 3 packets Equal sweetener. Pat mixtureevenly on bottom and halfway up side of pan. Bake in preheated 350°Foven 8 to 10 minutes or until set. Cool. Pour orange juice into smallsaucepan. Sprinkle gelatin over orange juice and let soften 1 minute.Heat, stirring constantly, until gelatin dissolves, about 3 minutes.Blend cream cheese and ricotta cheese in large bowl until smooth; stirin 12 packets Equal sweetener. Add gelatin mixture to cheese mixture;blend until smooth.Fold whipped topping into cheese mixture. Stir in chopped oranges. Spooninto prepared crust and spread evenly.Chill 6 hours or overnight.
