Guest guest Posted February 7, 2002 Report Share Posted February 7, 2002 Oven-Baked Deep-Dish Apple Pancake Recipe courtesy Peg Stahlman, Yankee Hill Inn, Plymouth, Wisconsin 3 eggs 1/2 cup milk 3/4 cup pancake mix 1/3 cup sugar, total 1 teaspoon cinnamon 3 large cooking apples, peeled, sliced 1/4 cup chopped pecans Preheat oven to 450 degrees F. In a mixing bowl combine the eggs, milk, pancake mix, and 1 teaspoon of the sugar. Combine well until it forms a smooth batter. Set aside. In a small bowl combine the remaining sugar and the cinnamon. Set aside. Spray a microwave safe, 2 to3-inch deep, 9-inch, round glass pie plate with cooking spray. Then, add all the sliced apples to the dish. Cover with plastic wrap. Cook in the microwave for 5 to 6 minutes, or until apples are tender. When apples are done cooking, sprinkle pecans on top of apples. Then pour reserved batter over apples and nuts. Then generously sprinkle the top of the batter with the cinnamon and sugar mixture. Cover the pie plate with foil and bake for 10 to 12 minutes until the pancake is set. Best served hot with maple syrup or apple cinnamon syrup Language is an expression of thought.
