Guest guest Posted February 12, 2002 Report Share Posted February 12, 2002 Recipe Name: OKRA ITALIANO Servings: 6 Comments: 1 Onion; chopped 1 Clove garlic; sliced 4 Large Tomatoes; coarsey chopped 1 Pound(s) Okra; cut into 1/2 " thick -rounds 1/2 Cup(s) Wine, white 1 Bay leaf 1 Teaspoon(s) Oregano Pinch(es) Sea salt Pinch(es) Black pepper 6 Cup(s) Rice; cooked, hot 2 Tablespoon(s) Parsley, fresh; chopped 2 Tablespoon(s) Olives, ripe; sliced Combine onion, garlic, tomatoes, okra nad wine in a lare skillet and bring to a boil. Add bay leaf and oregano. Lower heat, cover and simmer for 20 minutes, stirring occasionally. Season with salt and pepper and ladle over rice. Garnish with parsley and olives.
