Guest guest Posted February 13, 2002 Report Share Posted February 13, 2002 Teddy's 1/2 Pound Cake This is a recipe for a pound cake that has been modified. So instead of being a true " pound " cake...I like to call it a " half a pound " cake. 3 large eggs at room temperature 2 teaspoons of vanilla extract 1 1/2 cups of " CAKE FLOUR " 3/4 teaspoon baking powder 1/4 teaspoon salt 3/4 cup (1 1/2 sticks) unsalted butter at room temperature 3/4 cup sugar Preheat your oven to 350 degrees. If you are using a non stick or coated pan decrease the heat to 325. Butter and flour a loaf pan and set aside. Wisk eggs and vanilla extract in a small bowl and set aside. Sift your flour, salt and baking powder. (Some brands of cake flour include salt and baking powder. If yours does...you can eliminate them from the recipe) In a medium bowl cream butter and sugar till light and fluffy, then add the egg mixture and beat until nicely blended. With your mixer on a low speed slowly add flour and be sure to scrape down the sides of your bowl. Once everything is mixed put your batter into the loaf pan. The batter will be on the thick side. Smooth the batter out and bake for about 1 hour and 10 to 15 minutes. The top of the cake should be a nice golden brown and use the toothpick test to test for doneness. I like to serve this cake plain. It also holds up well with a lemon glaze if you like. I usually just cut a slice...cut the bottom and side crust off (I eat those first) and sit down with a big mug of Diet Pepsi. Enjoy Language is an expression of thought.
