Guest guest
New Style Collard Greens Have all the flavor of traditionally prepared collard greens, without all of the fat that is normally added! 2 bunches (about 4 pounds) collard greens 6 cups water 2 teaspoons salt 1 or 2 dried red peppers or 1/2 teaspoon ground red pepper (cayenne) 1 clove garlic, mashed 1/2 teaspoon sugar 1 tablespoon olive oil Cut through the stems and yellow leaves from the collard greens and discard. Gently rub the leaves with your fingers under running warm water. Cut the greens into large pieces. Let the leaves soak in warm, salted water for 10 minutes. Rinse with cool water and drain in collander. In a large pot, bring the water to a boil. Add the collard greens , s, salt, red pepper, garlic, sugar, and olive oil. Reduce heat, cover, and simmer over low heat for 1 1/2-2 hours, or until the greens are tender. Stir occasionally and add hot water to cover the greens as needed.
