Apple Pie with Caramel Topping

For the Apple Mixture

1 deep dish pie crust (9 inch) - prepared

6 medium Granny Smith apples - peeled and sliced

1 tablespoon fresh lemon juice

1/2 cup sugar

3 tablespoons flour

1 tablespoon cinnamon

1/8 tablespoon salt

For the Crumb Topping

1 cup brown sugar

1/2 cup flour

1/2 cup oatmeal

1/2 cup butter

1/2 cup Pecans - chopped

1/4 cup caramel topping

Preheat oven to 375F.

In large mixing bowl, toss apple slices with lemon juice, sugar, flour,

cinnamon and salt until coated. Transfer apple mixture to store bought pie

In a medium bowl, stir together brown sugar, flour, and oatmeal. Chop butter

into small pieces. Using a pastry blender, cut butter into flour mixture

until topping mixture resembles coarse crumbs.

Assembly

Sprinkle crumb topping over apple mixture. To prevent over browning, cover

edge of pie with foil. Bake for 25 minutes. Remove foil and continue baking

for 25 to 30 minutes, until top is golden. Remove from oven, sprinkle pie

with pecans, then drizzle with caramel topping. Cool on wire rack.
