The combination of ingredients may sound awfully weird, but they do work. If you can't find blood oranges, plain ones will do. 1 head lettuce 1/2 cup corn kernels - roasted 1 jalapeno chile pepper - minced 1/4 cup cilantro - chopped 3 medium blood oranges - peeled and sectioned 1 teaspoon wine vinegar salt and pepper - to taste 1/2 cup rice vinegar 1/3 cup honey 1 tablespoon low sodium soy sauce 1 tablespoon grated ginger 1 tablespoon dark sesame oil 1/4 cup toasted pine nuts 1/2 cup diced avocado 1/4 cup goat cheese - crumbled Wash and dry lettuce, then tear into bite-sized pieces. Place in a large salad bowl. Add corn kernels. In a small bowl, mix jalapeno, cilantro, oranges, wine vinegar, and salt and pepper. Refrigerate until ready to use. Toss together vinegar, honey, soy sauce, gingerroot, oil, and salt substitute. Pour over salad and mix well. Place lettuce over 6 appetizer plates. Top with orange mixture. Sprinkle with pine nuts, avocado, and goat cheese. Serve immediately.
