Strawberry Rhubarb Pie

 

1 pie crust (9 inch)

For the Filling

2 cups strawberries - hulled and halved

3 cups rhubarb - chopped

1 cup sugar

1/4 cup cornstarch

For the Topping

1 cup rolled oats

1/2 cup brown sugar - packed

1/3 cup flour

1/3 cup butter

1/2 cup pecans - chopped

 

 

Preheat the oven to 400 degrees F.

For the Filling

 

In a large bowl, combine strawberries, rhubarb, sugar, and cornstarch. Mix

lightly until combined.

 

For the Topping

 

In a small bowl, combine rolled oats, brown sugar, and flour. Using a pastry

blender, cut in butter until crumbly. Stir in pecans.

 

Assembly

 

Spoon filling into prepared pie crust. Sprinkle topping over fruit. Bake for

45 minutes or until golden brown. If topping is browning too fast, cover

with foil.
