Guest guest Posted February 15, 2002 Report Share Posted February 15, 2002 Vegetarian Split Pea Soup 1 1/2 cups split peas 6 cups water 1 medium onion - diced 2 medium potatoes - peeled and diced 1/4 teaspoon garlic powder salt and pepper 1/4 teaspoon dried parsley 2 medium carrots - grated In a large pot, combine split peas and water. Bring to a boil, reduce heat. Cover and let simmer until tender (one hour). Add onion, potato, garlic powder, salt and pepper to taste, dried parsley, and carrots. Simmer, covered, for one hour. Transfer soup mixture to a blender (working in batches) and puree until smooth. Return to heat and warm through. Nutritional Information Calories: 155 Calories From Fat: 3% Protein: 9g Carbohydrate: 30g Cholesterol: 0mg Sodium: 17mg Language is an expression of thought.
