Wild Rice Patties

 

1 cup raw brown and wild rice (mix)

 

Cook and cool the rice according to package directions.

 

egg substitute equal to three eggs (soy flour or tofu would work well)

1/4 cup Veganaise

1 chopped onion

1 cup chopped pecans

salt to taste

 

Mix all ingredients and drop by spoonfuls into an oiled skillet and

fry until brown.

 

Prepare gravy (try the cashew gravy in our archives) and pour over

patties.

 

Bake covered @ 350° for 1 hour. Serve and enjoy!
