They are great plain with Thanksgiving sides or on buns with all the fixin's. 1 cup firm tofu 1 tablespoon olive oil 1/2 cup minced green onions 2 cups finely grated green cabbage, optional 1 cup finely grated carrots 1/2 cup flour 1/4 cup nutritional yeast 1 1/2 tablespoons soy sauce 2 teaspoons baking powder 1/2 teaspoon poultry seasoning 1. Heat the oil in a skillet and briefly sauté the green onions. 2. Add the grated cabbage (if using) and carrot and cook for 4-5 more minutes, until soft. Remove from heat and set aside. 3. Preheat the oven to 350° F. 4. Cream the tofu in a food processor. Add the flour, yeast, soy sauce, baking powder and poultry seasoning. Process until smooth. 5. Add the sautéed vegetables and pulse a few times, just to combine (or combine by hand). Stir in the green onions. 6. Spoon 1/3 cup of mixture in dollops onto a greased baking sheet. 7. Flatten to 1/4 - 1/2 inch patties and shape into neat rounds. 8. Bake for 15 minutes, then turn over each patty and bake an additional 10 minutes.
