Guest guest Posted February 15, 2002 Report Share Posted February 15, 2002 Orange Chocolate Muffins I'm sure you can make this in a loaf pan as well.Servings: 12 1 cup all-purpose flour4 (1 ounce) squares semisweet chocolate, grated2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt6 tablespoons stick margarine, softened3/4 cup white sugar2 eggs1 tablespoon orange zest1/4 cup orange juice1/2 cup buttermilkDirections:1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 12 cup muffin pan.2. In a medium bowl, mix flour, semisweet chocolate, baking powder, baking soda, and salt.3. In a separate medium bowl, cream together margarine and sugar. Beat in the eggs one at a time. Mix in the orange zest, orange juice, and buttermilk. Pour into the flour mixture. Mix until evenly moist, and transfer to the prepared muffin pan.4. In the preheated oven, bake 15 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
