Guest guest Posted February 15, 2002 Report Share Posted February 15, 2002 Spaghetti Marinara You Can't Refuse Prep Time: 15 minutes Cooking Time: 38 to 42 minutes Source: Ladies' Home Journal Ingredients 2 tablespoons extra-virgin olive oil, divided 2 cups chopped onions 2 tablespoons finely chopped garlic 2 cans (35 oz. each) Italian plum tomatoes, juice reserved, chopped 1 teaspoon oregano 1/2 teaspoon red pepper flakes 1/2 teaspoon salt 6 flat anchovy fillets, chopped 1 pound spaghetti, cooked according to package directions Fresh oregano sprigs, for garnish Directions: 1. Heat 1 tablespoon oil in a Dutch oven over medium heat. Add onions and garlic and cook 5 minutes, until onions soften. Add juice from tomatoes. Increase heat to medium-high and cook 10 to 12 minutes, until mixture is reduced by half. Add chopped tomatoes, oregano, pepper flakes and salt. Cook 10 minutes, stirring occasionally. Stir in anchovies and cook 5 minutes. Reduce heat to low and simmer 8 to 10 minutes, partially covered, until sauce is thickened. 2. Drain and divide hot pasta among 4 serving plates. Divide tomato sauce over pasta, then drizzle each with remaining 1 tablespoon oil. Garnish with oregano sprigs, if desired. Makes 4 servings.
