Guest guest Posted February 15, 2002 Report Share Posted February 15, 2002 Southern Fried Louisiana Yam Chips From " Vertamae Cooks in the American Family Kitchen " by Vertamae Grosvenor Ingredients: 4 yams (sweet potatoes) Vegetable Oil or Shortening for deep frying Salt Peel the yams and cut crosswise into very thin slices. Place in a large bowl, add water to cover, and refrigerate overnight. (the soaking removes the excess starch) The next day, in a deep-fat fryer (or a deep skillet), heat the oil to 365 degrees F. Drain the yams (if the yams are still dripping with water, the oil will spit and sputter and if you are using an open fryer or a skillet this can be very painful so make sure they are drained well!) pat dry. Working with about 1/3 of the slices at a time, slip the slices into the hot shortening. Fry, turning as needed to cook evenly, until golden brown. 5-8 mins. Using a slotted metal or wooden spoon, transfer to paper towels to drain briefly, then place on a platter and sprinkle with salt. Serve hot. Serves 4-6. **The fresh yams are not easy to cut by hand, which is the method I used. But, it was worth it. LOL the chips are full flavored and sweet. Enjoy! Got something to say?
