Pina Colada Cake

 

1 yellow cake mix w/ pudding in the mix

 

1 can sweetened condensed milk

 

1 small can (8 oz) cream of coconut milk

 

1 small can crushed pineapple with juice

 

1 pkg. coconut cream pudding mix

 

1 8 oz. carton Cool Whip

 

1-2 tsp rum flavoring, if desired

 

Shredded coconut, if desired

 

Bake yellow cake mix according to directions in 9x13 pan. While

 

cake is baking, mix Eagle Brand Milk and Cream of Coconut Milk.

 

When cake is done and while still hot, poke holes all over cake

 

with wooden spoon handle. Pour milk mixture over hot cake.

 

Refrigerate overnite or until chilled.

 

Mix pineapple and dry coconut cream pudding mix. Fold in Cool

 

Whip. Add rum if desired. Spread on cake. May be topped with

 

shredded coconut.

 

Better still, add a few drops of food coloring to coconut for a

 

colorful effect.
