Vegetarian Worcestershire Sauce

 

1 jalapeno pepper, seeded and diced

1 white onion, diced

2 T olive oil

1 t minced garlic

1/2 t black pepper

3 or 4 garlic cloves, peeled

1 t salt

1 peeled lemon

1 c dark corn syrup

1/2 c honey

2 c white vinegar

1 c water

2 large T horseradish

2 or 3 T molasses or brown sugar

 

Preparation:

 

Sauté the jalapeno pepper, onion, and 1 t minced garlic in the olive oil.

Add the remaining ingredients and simmer until streaks appear on a spoon

(approximately 1 1/2 hours). Strain, and it is ready to use.
