Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 CURRIED BLACK BEANS AND RICE Serves 10. 1 tablespoon olive oil 1 medium onion, minced 1 tablespoon curry powder 3/4 cup fat-free chicken broth 2 16-ounce cans black beans, drained and rinsed 1 tablespoon wine vinegar 3 cups cooked rice Heat oil in large heavy skillet over medium heat. Add onion and curry powder; cook, stirring frequently, until onion is tender. Stir in beans; cook until hot, stirring constantly. Remove from heat; stir in vinegar. Spoon over rice. Per serving: 242 calories, 3 grams fat, 10 milligrams cholesterol, 41 grams carbohydrates, 4 grams fiber, 14 grams protein, 278 milligrams sodium. Language is an expression of thought.
