Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 BERRY SHORTCAKE from Vitasoy Sandi P Aug 07, 2001 3 cups sliced strawberries, whole raspberries, or a combination 1 tablespoon lemon juice 1/2 cup original (plain) soy milk 1 teaspoon finely grated lemon zest 2 tablespoons maple syrup 1 1/2 cups cake flour 1/4 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon baking powder 4 tablespoons (1/2 stick) cold unsalted butter Clean berries and set aside. Preheat oven to 450 degrees. In small bowl or glass measure, add lemon juice to soy milk. Stir in lemon zest and maple syrup. Into bowl of food processor, fitted with knife blade, sift together flour, salt, baking soda and baking powder. Add butter 1 tablespoon at a time and process until mixture has consistency of coarse meal. Transfer mixture to bowl. Make well in center of mixture and add liquid ingredients. Stir gently with fork until dough forms. Turn dough out onto floured surface. Knead for half a minute until dough is workable. Roll out dough to 1/2- to 3/4-inch thickness. Cut 2 1/2-inch rounds and place on non-stick baking sheet. Roll out dough scraps and cut more rounds. Bake until tops are brown and tester comes out clean, about 8 to 10 minutes. Cool on towel-covered rack 15 to 20 minutes. Split shortcakes horizontally. Spoon fruit mixture onto bottom halves, replace tops and spoon on remaining fruit. Makes about 7 cakes.
