Guest guest Posted February 20, 2002 Report Share Posted February 20, 2002 Kia's Chilli Sundried Tomato Pesto 1 bunch Coriander 1 bunch Mint 1 cup roasted Cashew nuts 1teaspoon cumin seeds ( roast with cashew nuts) 1 Cup Olive Oil 1 Cup Sundried Tomatoes 1/2 - 1 Cup Grated Parmesan Cheese 1/2 C lemon Juice. 1-2 Chilli's Salt to taste Ok Blitz the lot up in kitchen wizz or blender, this is a chuck it all in recipe, but should have a nice infusion of chilli and cool mint, if too thick add a little water, can be frozen. play with the flavour to suit yourself, you might like more cheese or more chilli, anything goes.uses as a dip just thin it down a little with sour cream or yoghurt, nice on pizza bases, split a chicken breast and spread and wrap in bacon & bbq,on top of small toasts or spread in thin crepes top with sliced swiss cheese roll up and cut into pieces perfect for cocktail nibbles. _______________ Get your FREE download of MSN Explorer at http://explorer.msn.com/intl.asp.
