Enjoy!Ingredients:1/4 pound butter (1 stick) or 1/2 cup butter flavored Crisco oil1 large onion, chopped1 green or red bell pepper, chopped finely2 eggs, slightly beaten1 15-ounce can creamed corn1 15-ounce can whole kernel, incl. liquid1 box Jiffy corn muffin mix*1/2 tsp. salt1/4 tsp. garlic powder1 cup sour cream1 cup cheddar cheese, gratedPreparation:Preheat oven to 400 degrees. Saute onion and green pepper in butter. Add eggs, creamed corn can, corn and liquid, Jiffy mix, salt, sour cream and cheddar cheese. Pour into a 9x13 inch baking pan and bake for 45 minutes or until top is golden brown.
