Sweet Potato Flapjacks

 

INGREDIENTS:

 

2 small sweet potatoes (about 8 oz. each)

1/2 cup all-purpose flour

1/4 cup light brown sugar, loosely packed

1/4 cup grated orange zest

3 large eggs, separated, plus 2 large egg whites

1/4 cup heavy cream

1/2 cup melted butter

3 T unsalted butter

 

METHOD:

 

1. Bake the sweet potatoes in the oven at 350 degrees F, for 1 to

1/12 hours, or until tender.

2. Cut in half, scoop out the flesh, and transfer to a blender or

food processor.

3. Puree until completely smooth and transfer to the bowl of an

electric mixer fitted with a paddle attachment.

4. Add the flour, sugar, and orange zest, and beat together on

medium speed.

5. In a mixing bowl, beat together the egg yolks, cream, and slowly add to

the sweet potato mixture while beating.

6. Transfer to a clean mixing bowl. Clean the bowl of the

electric mixer, fit with a whisk, and whisk the 5 egg whites to

stiff peaks.

7. Using a spatula, gently fold in the sweet potato mixture and

the melted butter.

8. Heat the butter in a nonstick saute pan over medium heat. Drop

2 tablespoons of the flapjack batter into the pan.

9. When the bottoms of the flapjacks turn brown, about 3 minutes,

flip over with a rubber spatula, and cook the other side for 2 to

3 minutes.
