Fava Bean Salad1 lb. Dry Fava Beans1/2 clove of garlic, crushed 3 tbsp. Extra virgin Olive oil 1/4 cup lemon juice 3/4-tsp. salt 1-tsp. parsley chopped Instructions:Boil fava beans for 1-2 hours over medium heat.

Drain all but 1 cup of water.

Add salt, lemon juice, and crushed garlic.

Mix well or slightly mash mixture if desired.

Pour in a bowl and garnish with chopped parsley and olive oil.

If desired, decorate with slices of pickles, hot peppers, green onions, and chopped parsley.

Serve for breakfast with pita bread.
