Special K Roast

 

5 or 6 cups of Special K cereal

1 cup of Soy Milk

2 eggs, slightly beaten (Eggbeaters or

Scramblers may be used instead of regular

eggs)

1 8-oz container of lowfat cottage cheese

3/4 to 1 cup of chopped pecans

3 tbls Bragg's Liquid Aminos

2 packages of George Washington golden

seasoning

1/4 cup of nutritional yeast flakes

1 medium onion, chopped

1/4 cup cold-pressed canola oil

1/2 stick of butter or margarine

1 tsp minced garlic

 

Optional seasonings:

Dash of cumin

Dash of coriander

 

Preheat oven to 350 degrees.

Lightly oil a 13 " x 9 " x 2 " inch baking

dish with extra virgin olive oil.

In large bowl, using a large spoon mix

together the Special K cereal, pecans,

soy milk, eggs, cottage cheese, yeast

flakes, Bragg's Liquid Aminos, and seasonings.

 

In skillet, saute chopped onion and

minced garlic in the 1/4 cup canola oil

over medium heat until onions just begin

to turn clear.

 

Add the sauteed mixture to the previously

mixed ingredients, and stir together until

all ingredients are just mixed.

 

Spread entire mixture into the prepared

baking dish. Bake for approximately 45

minutes until top is golden brown.

Remove from oven and let set for 10

minutes. Cut in large squares and serve

with one of the vegetarian gravy mixes by

Loma Linda or Worthington. " Chicken Style "

vegetarian gravy mix is delicious with this

recipe.
