Here is a great soy protein recipe for entertaining in the backyard, or preparing ahead for a picnic. Measures Translation Table Ingredients: 2 T. olive oil 1/2 small onion, diced 8 oz. sliced mushrooms 1 tsp. Italian seasoning mix 1 14-oz pkg. Lightlife Lean LinksTMItalian 1/2 cup tomato sauce 2 small bunches broccoli, cut into florets (approximately 3 cups) salt and pepper to taste Instructions: 1. In a heavy skillet on medium heat, heat the oil and saute the onions until soft, about 5 minutes. Add the mushrooms and Italian seasoning, and continue to stir for two more minutes. 2. Slice the Italian links cross-wise and saute until browned. 3. Add tomato sauce and broccoli and simmer on low heat for 10 minutes. Cool completely, and serve at room temperature.
