Measures Translation Table Ingredients: 1 (14-oz) can vegetable broth 1 carrot, finely shredded 1 celery stalk, finely chopped 1 medium potato, peeled and diced 1 small onion, chopped 1 (12-oz) can evaporated skim milk 2 T. cornstarch 1 scoop GeniSoy®Natural Protein Powder 1/8 tsp. black pepper 1 1/4 cup shredded reduced fat sharp cheddar cheese Instructions: 1. In medium saucepan combine vegetable broth, carrot, celery, potato and onion. Bring to a boil. Reduce heat. Cover and simmer for 10 minutes until vegetables are tender. With the back of a fork, mash potatoes slightly against the side of the pan. 2. In a small bowl, combine 1/4 cup evaporated skim milk with cornstarch, soy protein powder and black pepper. Mix until smooth and lump-free. Add the potato mixture along with remaining milk. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Gradually add cheese. Stir until melted.
